When our Mom was in the hospital at Oregon Health Science University, we noticed something was dramatically different with the cuisine. I actually wanted to eat there and the patients love it! One of the employees shared how she loves having all of her babies (2) there so she can enjoy the food!
Yesterday I found out why. The chef is Fernando and his beautiful wife Marlene Divina. I attended a cooking demo yesterday presented as a neighborhood community class offered by OHSU. They have owned restaurants and even partnered with the Smithonian to write an indigenous cookbook.
Yesterday’s feast of oven-steamed local rockfish fillet with Tunisian flavors and chickpea and tomato salad with coriander and cumin on leafy greens was delightful. Although I will say their quinoa salad remains my favorite, and it is in the book!
